Due to my food coma last night, I managed to sleep 12 hours!! I have no idea how that happened. haha! I know it’s not good going to bed with a full stomach but I was exhausted. Anyway, I woke up feeling refreshed and ready for the day.
I found some awesome recipe ideas that I’m looking forward to trying and playing around with to make them my own.
I decided with these super ripe bananas I had, that banana muffins sounded perfect!
Allow me to introduce….
2 Cups Whole Wheat Flour
2 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Cinnamon
1/4 Tsp Salt
2 Tsp Chia Seeds
2 Bananas Mashed
1/2 Cup Unsweetened Apple Sauce
1/2 Cup Stevia in the Raw
2 Tbsp Olive Oil
1/4 Cup Almond Milk
2 Tsp Almond Extract
Chopped Pecans for Garnish (optional)
Preheat Oven to 375 degrees.
Mix Flour, Baking powder and soda, Cinnamon & salt in a large bowl.
In another bowl combine mashed bananas, Chia seeds, apple sauce, Stevia, almond milk, and extract and mix well, It’s ok if you have bigger chucks of banana.
Spray muffin pan with cooking spray or use paper liners and add about 2 tablespoons of batter into each cup.
Bake for about 15 to 17 minutes or until tooth pick comes out clean.
These little lovelies are so moist and tasty! Perfect for your morning snack or breakfast!
To spice it up a little, I recommend drizzling protein powered mixed with a little almond milk to create a drizzle effect!
Also these muffins are vegan!
